Harvested in late spring by beekeeper David Nunez, when Blackberry bushes explode with delicate white blossoms that provide ample pollen for hungry honey bees. The honey they produce has a bold flavor with pleasant fruity sweetness and hints of molasses. Try it laced on a tangy yogurt or drizzled on pancakes.

This private harvest Vinegar was made by our friend Jim Fullmer at Hoskin’s Berry Farm. Jim biodynamically grows and harvests the Blackberries and Apples, where the rare, heirloom Apples have been growing on his property for over 100 years. He naturally ferments them together in Oak barrels, and the result is a Vinegar that is truly alive. Fruity, tangy, and full of flavor, this Vinegar represents Jim's holistic farming practices and unique Oregon land. Try it in dressings, marinades, or in a shrub paired with fresh herbs.
